1 tsp cumin
1 diced poblano pepper or green pepper
250g mushrooms
14 ½ oz canned fire roasted crushed tomatoes
14 ½ oz canned diced tomatoes
19 oz red kidney beans
2 ½ cups beef broth
2 tbsp tomato paste
Salt and pepper to taste
Instructions
In a large pot, brown ground beef, 1 ½ tablespoons of the chili powderdiced onion, jalapeno and garlic. Once cooked fully, drain any extra fat.
Add in remaining ingredients and bring pot to a boil. Reduce heat and simmer uncovered for 45-60 minutes or until the chili is at your desired consistency.
Remove from heat and serve plain or top with sour cream, green onions, cheese, avocado, and/or cilantro!
Makes 6-8 servings
Tips
Do all prep work before you start - dice all the veg, measure out the broth etc. This will make the whole process much easier, organized and timely!
Rinse beans before using. Dump the can of beans in a colander and run water over them until the water is clear.
If beef isn’t your thing, substitute with any ground meat of your liking. It’ll still come out amazing! I’ve made this recipe with ground turkey and chicken broth instead of beef and I loved it.
This chili is absolutely amazing for meal prep - split it up into tupperware and you’ve got yourself dinner for every night of the week!
Have extra? Once the chili is fully cooled, separate into containers and store in the freezer. This is a great way to always have something healthy, ready to eat in case of emergencies.
Crank up the heat by adding some hot sauce or chili flakes
